Overview

We are looking for an experienced Chef for our Raw Bar counter of the newly opened “One Portomaso”, an all-day dining concept Restaurant located in St. Julian’s, Island of Malta.

We are looking for an experienced chef who has gained experience in the preparation of fish and meat dishes as well as crudités, with great ability in cutting and cleaning.

The ideal candidate will be responsible for the preparation of all raw fish, meat and vegetable dishes in the Crudo Bar section of the restaurant. This can include acquiring fresh fish on a daily basis from local fishermen or other merchants, as well as bringing in non-local catches, as needed, to supplement the menu. The ideal candidate is also in charge of preparing all of the fish and meat dishes on the menu, whether they are entrées or appetizers.  Able to prepare any sauces that need accompany the fish or meat dishes in the absence of the saucier. This would also make him/her responsible for any fish stocks or soups as well.

Both food preparation and final service will take place at the counter, therefore a good knowledge of the English language as well as excellent communication and interpersonal skills are a must.

Versatility in everyday’s kitchen operation is fundamental.

The Marina at Portomaso is the kind of place where you can simply decide where to eat as you are parking in the huge under­ground car park. You can have a pre-dinner drink in one place, eat in one of the restau­rants, have an after-dinner drink or coffee in another and then go for a nice walk along the marina.
